Coles Woods, Queensbury N.Y. [A Day Well Spent Blog]

From a Blog named "A Day Well Spent".  A wonderful area called Coles Woods.  I really enjoyed this, thank you my friend and Niece, Michelle.  I would love to walk it in the Autumn.  I liked all of the photos taken.

If you find yourself in the Glens Falls, NY area, Coles Woods is a beautiful walk in the forest in the middle of the Glens Falls area. It is bordered on one side by the Adirondack Northway, I-87 but I can ignore that when I do not have the time to drive a distance to the forest to see wildflowers and walk on a soft pine needle trail....

Sunday In The Park

I took my boy, Tucker, to the Kelley Park, here in my Town.  We walked along the creek, and enjoyed the tranquility of nature.  The weather was perfect to. 70 degrees, no humidity.  Tucker was smiling away and he would have completely immersed himself in the creek, if I had let him.

Orzo Salad

Here's my first recipe in my re-invented Blog.  Due to my few physical limitations ("malabsorption" and a gallbladder that isn't functioning), all of my recipes will be low-fat.
This is a go-to salad for me.  I make it twice a month.



Orzo Salad
1 tsp salt
8 oz uncooked orzo
1/4 C fresh lemon juice
3 TBS olive oil
1 tsp Dijon mustard
1/2 tsp black pepper
1 1/2 C diced fennel
1/2 C chopped raddish
1/2 C chopped kalamata olives
1/2 C diced sundried tomatoes

Cook orzo with 1 tsp salt.  Drain well.  Don't rinse.  Combine lemon juice, olive oil, mustard & pepper.
Stir into orzo w/olives, sundried tomatoes, fennel & radishes.  Add salt & pepper to taste.  Top w/toasted pine nuts (I toast the pine nuts when I have a serving of this, in my toaster oven.  Don't put them on all at once).

Birthday Greetings
