Chicken Marsala For One





I really like Chicken Marsala and don't get out to restaurants enough to get my fix.  So I make my own at home. I went into the Liquor Store up here in Saratoga Springs, and asked for a good cooking Sherry.  A very large shop, with a very large variety.  He directed me to the area for Sherry and he specified this brand:

 

And when I make a dish that has wine incorporated, I always go the extra yard and spend a little bit more.  I believe this is what makes this dish so good.  You do not want to use the Cooking Sherry from the Market...

Look at the list of ingredients. No good!!



Chicken Marsala  For One

1 lb. boneless Chicken breast cut into 8 pieces
Ground Pepper
flour for coating
2 TBS olive oil
1 C mushrooms, thinly sliced
1 garlic clove, minced
1 shallot, minced
2 TBS Parmesan, grated
3/4 C Marsala Wine - dry. not sweet
4 TBS chicken Stock

Flatten chicken to 1/2" thick.  Dust w/salt & pepper and flour.  Heat oil, fry about 5 minutes each side.  Keep warm.
Saute garlic & shallot, but do not brown.  Add mushrooms, saute.  Remove with slotted spoon, put on top of chicken.  Sprinkle with/cheese.

Put marsala wine & chicken broth in 1 TBS butter and boil rapidly to reduce by half.  Pour over chicken.  

(Note:  reduce the sauce to 1/3 concentration.  Saute garlic in Olive Oil with/salt & pepper.  Top chicken  w/mushroom mixture.  Top w/sauce.
